Greek Chicken Pasta Salad « Wendy's Knitch

This past weekend I was on my way to a bbq, so I asked my husband to quickly pick me up some of the Greek Chicken Pasta salad at Costco.  To my horror, he discovered that they were no longer making it and had replaced it with a tortellini salad.  I'm not usually a fan of cold pasta salads anyway and loved that salad, so I had to DO something!

Greek Chicken Pasta Salad

I pretty much just threw things together till it looked good, but here's what I generally did:

1 box of penne pasta, cooked according to pkg instructions
2 breasts from a rotisserie chicken, finely shredded
1 (14oz) can artichoke hearts, chopped (used all but one heart)
1 cup kalmata olives
1 pkg. grape tomatoes
1/2 cup chopped red onion
1 small pkg (4 oz??) Feta Cheese, well crumbled
about 1/2 a bottle of Kraft Greek Viniagrette dressing

Everything except the dressing can be mixed together the night before. Then dress it about an hour before serving. Keeps well. You may just want to add a dash more dressing to perk it up in days following.  This makes a LOT though, so I'll probably just make a half batch next time.  A pretty good match to the original, I would say!
